Vinification of the Rosé Sauvage Champagne Piper-Heidsieck

For this extravagant champagne Rosé Sauvage  Piper-heidsieck brut rosé   , 50-55% Pinot Noir, 20-25% Pinot Meunier, 15-20% Chardonnay and 15-20% Reserve wines were vinified. 20-25% of Pinot Noir was vinified as red wine. The unusually high proportion of red wine gives this rosé its unique personality and makes this cuvée a wine that can also accompany an entire meal. The Chardonnay grapes are harvested in the Montagne de Reims, the Pinot Noirs come from Les Riceys in the Cote des Bars wine region in Aude, the southernmost region of the Champagne wine region.

Piper-Heidsieck Brut champagne brings its own lively, vivacious and exuberant character to dry champagne’s traditional elegance and finesse. It combines 50 rigorously selected growths. Pinot Noir and Pinot Meunier grapes give this cuvee its structure and elegance. Reserve wines from earlier years are used to create a more rounded blend and ensure the originality of the Piper-Heidsieck style. The wine’s harmony develops over the course of slow aging in Piper-Heidsieck’s chalk cellars.Concentrated in Montagne de Reims, Vallée de la Marne, Cote des Blancs and Cote des Bar, these winegrowers are devoted to applying ever more stringent environmentally friendly procedures in the vineyard by decreasing using chemical substances, increasing biodiversity, dry farming and Vitality and waste management  Piper-heidsieck brut rosé  .

TASTING NOTES

On the eye: Sparkling clarity, pale gold in color.

On the nose: The very first impressions are of bright, fresh mornings. It is reminiscent of spring blossom such as hawthorn. They lead into more fruity notes such as summer apple and pear, then citrus, with hints of warm toastiness.

On the palate: The first impression is lively and fresh. The citrus notes take on a certain maturity. There is passion with gentleness, lightness with spontaneity.
